Yesterday Julie made cookies. Amazing looking flourless peanut butter cookies. I had to have them, immediately. I also feel peanut butter cookies are often too “floury” and couldn’t wait to try these.
…The only peanut butter we currently have in the house? Basil’s peanut butter. Yes, my dachshund has his own jar. 🙂 I’m not eating where a double dipped knife has been in his Kong. No offense, Basil-Pup. So?
Basil said, “Use your own damn that jar of Barney Butter on the counter. I see it, you think I can’t”.
So to adapt Julie’s recipe, I used:
1 cup Barney Butter (almond butter)
1 cup sugar (I used about 1/3 powdered, 2/3 granulated, just for kix)
These are amazing – so easy, so quick, fun for Basil, and super delicious (that’s delicious x 100).
I cooked mine a bit longer, as not everyone in the house likes a gooey cookie. I may have eaten one that way, though, while the rest finished. These are so tasty, I know it’s going to be a go-to recipe for me now. You can have cookies in about 15 minutes.
