Last week was catch up time for me – I just returned from L.A. where I not only spent four days at Expo West – the Natural Food Products show, but I also took another week for vacation, just by myself. Expo West was amazing and overwhelming and so much dang fun, I cannot wait to go back next year!
…and vacation time was so nice. I went to the beach, I walked all over everywhere, I relaxed and I ate some fantastic food. I have at least a couple of posts to recap, coming soon.
So, all of that means I have not been around for Meatless Mondays. This week the ingredient is squash, which I love in so many ways. In lieu of a new recipe, I am sharing some of my favorites with you.
Anyone want to take a half a guess at what my favorite squash is? It may not be apparent here. But it might. Do you have a favorite?
