Salted Caramel Apple Oatmeal – fresh tart apples and sweet caramel sauce top this rich cashew oatmeal, for a hearty breakfast you will want every weekend!
Second only to small plates and eating a dinner made up entirely of appetizers, my favorite is breakfast. Even on the weekdays when I have more of a schedule, I enjoy breakfast, but weekends is where my breakfast game is strong.
How many times can I use the word breakfast?
Weekends are for brunch. I wish I could brunch every weekend.
Complete with mimosa, right?
We have enjoyed some epic all morning brunch with friends. As much as I love to meet friends out at our favorite restaurants – and Portland has many – having breakfast brunch at home is something I equally look forward to. As you know I love to entertain.
As the weather gets warmer and nicer here, we like to spend our weekends out.
Outdoors. Outside. Fresh air. Sunshine.
We recently had friends over for a “quick” breakfast before heading out for a Saturday. Since we would be hiking / walking a lot, I wanted to begin our day with something hearty, that would give us energy rather than make us want to take naps (there is nothing wrong with those type of brunches…).
I whipped up a double batch of my wonderfully rich cashew oatmeal, topping it with fresh chopped tart apples and a generous drizzle of my date caramel. Paired with coffee and Apple Apricot Juice, we were happily fueled and set for our morning.
Today I am beside myself giddy to be sharing my recipe with my friend Kayle at Cowgirls and Collard Greens! Yeehaw! I am not only sharing my Salted Caramel Apple Oatmeal recipe, but several of my favorite brunch ideas, just in time for your upcoming weekend! Please come join me and say hello, won’t you?
