My dad is one of those people who have everything. If he wants something, he gets it himself. I take after him in this way. What that means is, when I give him gifts I have to get creative. This year for fathers day, we took him to lunch, and I made him brownies. With peanut butter hiding inside.
Because, who doesn’t like brownies, right?
Simple bites of gooey chocolately goodness. This is how it’s done:
1 1/3 cups sugar
3/4 cup butter, melted
2 tablespoons water
3 teaspoons vanilla
1 1/3 cups flour (I used a mix of tapioca + GF all purpose)
3/4 cup cocoa
1/2 teaspoon baking powder
1/4 teaspoon sea salt
3/4 cup chocolate chips
Combine sugar, butter and water – add eggs and vanilla. Combine flour, cocoa, baking powder + salt, add to sugar mixture. Stir in chocolate chips.
Fill mini cupcake tins half full – place small amount peanut butter in center – continue to fill brownie batter near top of cupcake tin, covering peanut butter.
Bake @ 350, 20 minutes or until inserted toothpick comes out clean.
This recipe gave me enough to fill 24 mini cupcakes, and have a little leftover, for quality control tasting:
