Those tomato basil bean balls have become a favorite at our house, and we have enjoyed them many ways. I really cannot adequately express how great these taste.
Our latest version was a double play on words – these are in themselves a meat ball alternative, and when you use lettuce instead of bread roll it’s a meat ball sub twice over.
Look at that wonderful melty cheese.
If you make the tomato basil beanballs (and you really should), please take the extra minute to process the beans alone first, before adding the rest of the ingredients. It really does make a difference, and I know this first hand. I recently made them and in my distraction, added everything to the processor before starting it up.
I was able to save them, it took some flour and made a big mess. So do as I say, not as I do.
I sliced some squares of my favorite vegan cheese and topped these right before they were finished cooking. Lined them up on romaine leaves and let them swim around in marinara. Crispy crunchy cool and warm melty tasty altogether – my favorite kind of meat ball sub.
