I made these as part of a bigger recipe, but I just had to give them their own post because they are that good. They are uncomplicated also, which you may know I like.
I may have eaten too much of these potatoes with lunch today, and there may be another sweet potato cooking right now…
mashed red pepper sweet potatoes
3 sweet potatoes, peeled
1/2 jar roasted red peppers
1 tablespoon earth balance
1 clove garlic
Cut each potato into 3-4 pieces, boil until soft, 15-20 minutes. Meanwhile, roast garlic. Purée peppers and garlic in food processor or blender. Add peppers to cooked potatoes and mash.
These are a perfect blend of savory and sweet – spicy garlicy enough for those who many not generally like sweet potatoes. If I were serving these as a side dish, a garnish of crumbled goat cheese would be perfect!
