Happy St Patrick’s Day!
I figured for St Patty’s Day I would create another something with my homemade Baileys Irish cream.
This isn’t your typical blondie – brownie consistency. I’ve had three votes they may be better. I am developing a fudge recipe for another project, and got to thinking about the blondie recipe I was making for you guys.
The fluffiest, melt in your mouth blondie was born. The powdered sugar makes these so light and honestly, melty.
and if you still need chocolate?
Go for it.
fluffy Irish cream blondies
gluten, soy and dairy free, vegan
1/2 cup butter (Earth Balance soy free)
2 1/4 cups powdered sugar
1/4 cup + 2 tablespoons Baileys (homemade)
1 1/2 tablespoons vanilla paste
1 egg (Ener-G replacer)
pinch sea salt
2 cups flour (gluten free all purpose)
In saucepan over medium heat, melt butter. Whisk in sifted powdered sugar, 1/2 cup at a time, until fully dissolved into butter. Stir in Baileys, vanilla paste and (prepared) egg. In mixing bowl, combine flour and sea salt, stir in Baileys/butter mixture. Transfer to a prepared 8×8 baking pan, bake at 350 for 30 minutes – inserted toothpick should come clean.
The only thing that makes these blondies remotely appropriate for St Patty’s Day? The Irish cream.
