    Grapefruits are so good right now! I have been eating at least one a day - sometimes two. This recipe is actually something I started thinking about over the summer, and I am happy I was so swamped I waited until now to get around to it.

    I made a loaf to bring to a party, and a small loaf for us to eat at home! I recently found the cutest mini loaf pans, and this was a great time to use one:

    Honestly, I did get a few looks at grapefruit cake, but even the skeptics loved it!


    grapefruit pound cake

    1 cup gluten free all purpose flour
    ⅓ cup cornmeal
    ¼ cup tapioca flour
    1 teaspoon baking powder
    2 sticks dairy free butter
    1 cup sugar
    4 eggs
    2 teaspoons vanilla
    ⅓ cup fresh grapefruit juice

    Combine flours and baking powder. Separately, cream earth balance + sugar. Add eggs + vanilla. Slowly add dry ingredients. Add grapefruit juice until just incorporated.

    Pour into prepared loaf pans and bake @ 350 for 55 minutes, or until inserted toothpick comes clean.

    I squeezed juice of one more grapefruit, added to about ⅓ cup powdered sugar and poured as a glaze over the top.

      Grapefruit?!? I'll admit I would probably be one of those people giving you funny looks. I'm open to new things, so I'd give it a try, but I can't say that I've ever liked grapefruit. Too sour!

      Those baby loaf pans are precious. I really need a bread loaf pan - can you believe I've never had one?!?

      LOL! I've seen the video posted everywhere but for some reason hadn't watched it until now. (Really, this just means I trust your humor and not the humor of others.) I have to send it to Billy right now.

      Yummy looking pound cake. Never seen grapefruit used like this but I'm definitely curious to try it. And yes - it's definitely been a busy busy week. Gotta love the holidays. 🙂

      I loooooooove grapefruit, and I hate that I have to eat it sparingly because of my birth control! 😐 This is right up my alley! And yeah, busy week is busy for sure!

      What an awesome idea for grapefruit! I have been loving it lately too - usually just with a spoon and maybe a little honey. 🙂
