Are brownies one of the best desserts ever? Brownies and cheesecake fight for number one, always. Combining the two may have been the best thing I have done, ever.
I first thought of this recipe at a beach bar in San Pancho. I was enjoying a pineapple margarita. No real idea why I thought of brownies (well, I was keeping an eye on the beach, looking for the lady who sells fresh warm doughnuts). We returned home, I added pineapple sweetened brownies to my recipe ideas list, and kinda let it sit there.
Because I love brownies so, and have no idea why I didn’t try this immediately. I finally started testing some recipe ideas a month ago, and after few interesting batches of brownies, here we are. Combining one of my favorite desserts with fruit as sweetener.
Spoiler alert – the pineapple did not go well.
I so thought it would! I even considered the acidity, and added some coconut milk to balance that. Nope. The brownie was still far too bitter. Next, we tried grape juice concentrate. Still too acid, still a bitter finish.
By this time, I had sampled enough brownie batter to know if the finished brownie would be sweet enough. My final recipe idea tasted good, and I still decided it needed a bit of help from some maple syrup. Just a bit.
These Fruit Sweet Rich Fudgy Brownies are just that – perfectly gooey chewy rich and exactly the tart sweet I was aiming for.
Fruit Sweet Rich Fudgy Brownies
YIELD: 9-16 brownies, makes one 8×8 pan
dairy, egg, soy and gluten free, vegan
5 ounces dairy free chocolate chips or chocolate, chopped
1/3 cup vegan butter (or coconut oil)
2/3 cup maple syrup
3/4 cup gluten free all purpose flour
3/4 cup cocoa powder
1/2 teaspoon sea salt
1/2 cup 100% apple juice concentrate (from frozen in can, undiluted)
1/2 cup cashew milk (any dairy free milk)
1/2 cup 100% applesauce
Preheat oven to 350 °F. Grease an 8×8 baking pan, line with parchment.
Using a double boiler over low heat, melt chocolate and butter. Remove from heat and stir in maple syrup. Set aside.
In a mixing bowl, sift together flour, cocoa, and salt.
To the dry ingredients, add the apple concentrate, milk, and apple sauce, stirring until just combined. Fold in melted chocolate. Combine completely – the consistency will be like a fudgy ganache.
Transfer to greased, lined baking dish, spreading into an even layer. Bake at 350 °F for 25 – 30 minutes, or until an inserted toothpick comes out clean.
Frosting can be as simple as melted chocolate and powdered sugar. For at least two of these batches, I added almond butter too…
