Fruit Stripe Pops – a sweet and tart combination of layers, with fresh watermelon and tart green apple flavor – keeps you cool and Spark gives you a bit of a boost!
Portland’s late summer has been a hot one – on our wedding day, we were on the Departure rooftop deck in 98 degree temperatures. We took photos quickly, and joked about taking the next photos in the restaurant walk in…
The heat has continued through our first two weeks of honeymoon – vacation, which has been great while we’ve been out playing in our own city before we travel. We have been enjoying some lake side happy hours on warm evenings, complete with awesome kombucha flights.
My all time favorite Advocare product is Spark. In this summer heat, an icy cold Spark usually replaces my coffee. There is a limited edition green apple flavor available right now – bright and tart and perfect for a popsicle. Fresh sweet watermelon seemed like the perfect flavor pairing.
…and I love the stripes. They look like little sweaters.
That we won’t be wearing for a while.
Is it hot where you are?
watermelon apple fruit stripe pops
YIELD: six pops
1/2 mini seedless watermelon
pinch sea salt
sweetener as needed
1 stick packet Spark Green Apple
8 ounces coconut water
Slice watermelon, removing rind. Cut into cubes, add to blender. Blend at high speed, using tamper tool as needed. Mixture should be slushy liquid. Using tamper tool, push this mixture through a mesh strainer over a large bowl, straining out the seeds and pulp, leaving watermelon juice. Add salt and sweetener if using, stir.
In a separate pourable container, mix Spark Green Apple powder with coconut water.
To make stripes, you will need a popsicle mold that will let you fill and freeze, fill and freeze – I have this model and love it. Begin filling popsicle molds – first layer watermelon. Place in freezer until frozen. Store watermelon juice and Spark in fridge while freezing. Continue filling until all pop molds are full.
