Epic Tofuna Melt Sandwich – a flavorful and crunchy plant based tuna and a truly epic and melty vegan cheese, this sandwich is one you will crave often.
I have two epic things to share with you today – a new plant based tuna, and some of the best plant based cheese I have ever tasted.
First, the tuna. A fellow Portland vegan recently launched a kickstarter campaign for their new product, Tofuna Fysh. A new plant based product on kickstarter? Chances are I will support that. I was one of the supporters of Zach’s campaign, and it was successfully funded. One of the supporter perks was a big ol’ tub of Tofuna Fysh, woo HOO!
I met Zach The Founder for lunch a while back – for a nice chat, a fantastic lunch, and to accept my major award. uh, my Tofuna Fish.
This stuff is good! Of course I had to try it as soon as I arrived home – spoon in the tub, directly into mouth. Main ingredients being jackfruit, soy protein, celery, and onion, this is flavorful and crunchy. I loved it. Right now Tofuna Fysh is available locally in Portland, but Zach has plans for expansion and products / packaging that will be shippable. I will keep you all updated. I want you to have this.
I arranged to meet Zach at my new favorite place, Vtopia Cheese Shop and Deli. Their case is brimming with vegan cheeses, their own wonderful creations and those of others, including Miyoko, Heidi Ho – some of my other favorites.
I have some other creations to share later with some of the Vtopian cheeses. Today, I want to talk about their ooooh so good cheddar. This is the second wedge I have bought, and I knew it would be perfect as the melty goodness to counter the Tofuna Fysh in a Tuna Melt sandwich.

I cannot describe the flavor of this cheese. Honestly, I have sat here for a good several minutes, thinking about it. Creamy texture that is perfect eaten as is, fresh off the wedge. I can tell you from first hand experience it is the star of the cheese plate, if that is how you choose to showcase the awesomeness.
If you do, please tell me you will cut off a hunk and hide it away, to make your own tuna melt or grilled cheese. It is simply amazing.
Epic Tofuna Melt Sandwich
YIELD: one sandwich
dairy, egg, and gluten free, vegan
2 slices gluten free bread
several slices Vtopian Aged White Cheddar
4-5 tablespoons Tofuna Fysh
Arrange cheese slices to cover bread. Set under broiler to melt, or heat on stovetop or microwave.
Remove from heat, spoon Tofuna Fysh onto one piece of bread, over cheese. Top with other slice of cheese bread. Press together slightly.
Seriously epic. So melty, you need a fork.
