Lavender Date Goat Cheese Pies
Lavender Date Goat Cheese Pies dairy, soy, egg and gluten free, vegan
  • 7 large dates, pitted
  • 3-4 tablespoons water
  • 4 ounces (vegan!) goat cheese
  • 1½ tablespoons culinary lavender
  • one recipe Easy Gluten Free Pie Crust (recipe follows)
  1. Preheat oven to 350 °F.
  2. In saucepan over medium heat, combine dates and water. Stir/mash until dates melt into a paste and absorb water. Remove from heat and allow to cool a bit.
  3. To cooled dates, add goat cheese and lavender. Combine completely.
  4. To make hand pies, or Pi: Spoon filling onto crust, leaving room at the edges. Top with another Pi shape, pinch edges to seal.
  5. Bake at 350 °F for 14-18 minutes, or until when crust is lightly brown.
