Raw Caramel Apple Cobbler

dairy, egg, soy and gluten free, vegan
  • 2 apples, sliced horizontally and cored
  • ½ cup raw cashews
  • 4-5 dried figs, pitted
  • 4-5 dried dates, pitted
  • 1 tablespoon maple syrup
  • caramel sauce (recipe below)
  1. Pulse cashews, figs, dates and maple syrup in food processor until a sticky crumble mixture forms.
  2. Stack apple with fig cashew mixture between each slice, drizzle with caramel sauce.
