Frito Pie Pepper Jacks

dairy, egg, soy, and gluten free, vegan
  • 2 orange bell peppers
  • 2 servings Smoky Lentil Chili, or your favorite chili recipe
  • 1 - 2 ounces Quick Smoky Vegan Cheddar, grated and divided
  • ⅓ cup Fritos corn chips, divided
  • 2 tablespoons cashew cream, divided
  • 1 fresh jalapeño pepper, sliced
  1. Preheat oven to 350 °F.
  2. If not prepared ahead of time, make chili.
  3. While chili cooks, cut tops off bell peppers as you would a pumpkin. Remove all seeds and ribs inside. Carefully cut jack o’ lantern faces into the best surface side of each pepper.
  4. To assemble: Place peppers into a baking dish. Spoon prepared chili into carved peppers (this can be cold if made ahead of time). When pepper is half full, layer with grated vegan cheese. Top with more chili, and another layer of cheese.
  5. Bake at 350 °F for 30-35 minutes, or until heated through and peppers have softened.
  6. To serve: Top with Fritos, cashew cream, and jalapeño pepper slices.
