Fluffy Cidermilk Pancakes

dairy, egg, soy and gluten free, vegan
  • 1 cup gluten free all purpose flour
  • 1 tablespoon vegan granulated sugar
  • 1 tablespoon baking powder
  • ½ tablespoon cornstarch
  • ¾ cup cashew milk
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons vegan butter, melted (soy free Earth Balance)
  1. In mixing bowl, whisk together flour, sugar, baking powder, and cornstarch.
  2. Whisk together cashew milk, apple cider vinegar, and melted butter. Add to dry ingredients, whisk until just combined - do not over mix - especially if using gluten flour.
  3. Using ⅓ cup scoop, form pancakes onto prepared (buttered, sprayed) griddle over high heat.
  4. Pancakes will bubble, will easily come up to turn after less than one minute. Flip and cook another half minute or so, until cooked through.
