Tangy Lemon Crabless Cake Salad

Serves: two salads
dairy and egg free, vegan, gluten free option
  • 1 package Mini Crabless Cakes (see gf / whole foods options below)
  • 3 cups mixed salad greens, washed
  • 1 fresh lemon, sliced into wedges and seeded
  • 3-5 tablespoons Vegan Thousand Island Dressing
  1. Preheat oven to 450 °F. Line a baking sheet with parchment.
  2. Arrange crabless cakes in single layer on baking sheet. When oven is heated, bake for 5 minutes each side (removing from oven and turning halfway through.)
  3. Air Fryer instructions: 360 °F for 9-10 minutes, shaking / turning halfway through.
  4. While crabless cakes cook, arrange salad greens on dishes or bowls. Top with Thousand Island dressing.
  5. Top the salad greens with warm crabless cakes. Squeeze fresh lemon juice over salads.
  6. (For a gluten free option, replace crabless cakes with Sesame Scallops or Artichoke Shiitake Ceviche.)
