Bright Lemon Cookies

  • ½ cup vegan granulated sugar
  • 2½ tablespoons vegan butter (Earth Balance sticks)
  • 3 tablespoons aquafaba
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons fresh lemon zest
  • ¾ cup + 1 tablespoon gluten free all purpose flour
  • 1 teaspoon baking powder
  • pinch salt
  1. Preheat oven to 350 °F. Line a baking sheet with parchment.
  2. In a large mixing bowl, cream together sugar, butter, aquafaba, lemon juice and zest.
  3. Add flour to bowl, do not mix. Add baking powder and salt, stir into flour, then fold flour into butter sugar mixture.
  4. Using your hands, roll dough into balls, place 3 inches apart on baking sheet, flatten. Bake at
  5. °F for 15 - 17 minutes, or until cooked though and light golden in color. Transfer to rack to cool completely.
