Vanilla Apricot Energy Bites

  • ⅓ cup sunflower seed butter
  • 2 tablespoons maple syrup
  • ½ cup vanilla protein powder, extra for rolling
  • ½ cup raw cashews, pulsed¬†fine
  • ¾ cup dried apricots, chopped small
  1. In large bowl, combine sunflower seed butter and maple syrup, stir until smooth.
  2. Add cashews to blender, blend until they are half powder, half small pieces. Add cashew pieces / powder to sunflower mixture, do not stir.
  3. Add apricots to blender, blend into small pieces. Add apricots and protein powder to cashews and sunflower, fold together until completely incorporated (after a couple turns of the spatula, I use my hands).
  4. Roll into bite size balls, ¾ to one inch in size. Add 1-2 tablespoons protein powder to a plate, roll each ball through powder to minimize stickiness.
