Grilled Cheese Wafflewich Sliders

Serves: 2 large Belgian style waffles
dairy, egg, soy, oil, and gluten free, vegan
  • 1 cup grated zucchini
  • 1 cup gluten free all purpose flour
  • 1 tablespoon baking powder
  • ½ cup club soda
  • 1 tablespoon nutritional yeast
  • pinch salt
  • crispy lettuce leaves
  • tomato slices
  • cashew cheese sauce or dairy free slices
  1. In mixing bowl, combine grated zucchini, flour, baking powder, club soda, nutritional yeast, and salt. Vigorously whip by hand to combine thoroughly. Allow batter to rest several minutes, whip again.
  2. Using a ⅓ cup measure, scoop batter into middle of a non stick waffle maker.
  3. Close and cook per machine instructions. I cooked mine about 3-4 minutes on one side, flipping and cooking another minute (using a waffle iron that flips).
  4. Slice each waffle into quarters.
  5. Slice waffle quarter open to make two slices of "bread". Spoon cheese sauce on one side of waffle. Stack tomato and lettuce on top of melted cheese, cover with other waffle slice.
  6. Enjoy immediately, or toast in oven to warm up.
