Well, not new. Not even new to me, just something I haven't enjoyed for a while.
An old classic?
You know how you get hooked on a food and just want it every day? That's me. With this.
During the final months of every year, I eagerly await the holiday flavors of So Delicious products - their holiday beverages especially.
This year, all through the holidays, I was enjoying a Chocolate Mint Chia Pudding Parfait nearly every day for breakfast. Or a Pumpkin Spice Chia. Seeing as their Mint Chocolate Coconut Milk is one of my favorites, this one got the most play in my kitchen.
So good. Especially if I have the freshest (meaning almost green) bananas. Oh yeah.
I have two more cartons of Mint Chocolate Coconut Milk left - expiration like, March? or May? Something great, you know? So it is possible you might be able to find some too? Then make these.
You can even use your favorite chocolate milk. Add some mint extract.
Chocolate Mint Chia Pudding Parfait
YIELD: one serving, or two small snacks
dairy, egg, soy and gluten free, vegan
¼ to ⅓ cup chia seeds
pinch sea salt
¾ cup So Delicious Mint Chocolate Coconut Milk
3-4 tablespoons walnut pieces
1-2 tablespoons dark chocolate chips
1 banana, peeled and sliced
In container with lid, combine chia seeds, salt, and milk. Stir thoroughly, cover and refrigerate several hours / overnight.
In a serving glass or bowl, layer bananas, walnuts, chocolate chips and chia pudding.
