Thanks for all the wow on the snowflakes… many of you didn’t think they were real! 😀 They are pretty amazing.
In other news, I finally found gluten free lasagna noodles! I’ve been looking for a while.
I cannot recall the last time I made lasagna, but it wasn’t gluten free or vegan. This one is.
cheezy spinach lasagna
1 cup raw cashews, soaked
2 large handfuls fresh spinach
1/2 package soy curls, rehydrated
1 can tomato sauce
3-4 roma tomatoes, sliced
1/2 cup vegan cheeze
gluten free lasagna noodles!
Start layering in baking dish:
Bake @ 350, covered, for one hour.
This was cheezy creamy goodness. Vegan comfort food. While it may not be the most photogenic, I think it’s pretty! So tasty good, I know because Jason said many good things, unprompted. 🙂
