First Breakfast was something I have not had for a while – banana soft serve. I had a couple of bananas that were too brown for me to eat. Into the freezer they went! I forgot how amazing this stuff is. Perfect with the crunch of chia.
I used almost a whole box of spinach today…
Second Breakfast was another bit of wonderful… a spinach smoothie. This included:
4 huge handfuls of spinach
1 cup almond milk
1 scoop vanilla protein
Lunch was a new combination of quinoa salad, in my favorite bowl (Jason made it). 😀
It is way to early to be thinking of the holidays, but aren’t the colors in this salad festive? 😀
Fall-iday Quinoa Salad
1 cup quinoa
1 1/2 cup vegetable broth
3 large handfuls fresh spinach
2 small bell peppers, diced
1/2 red onion, diced
3 marinated artichoke hearts, diced
Rinse quinoa, cook in vegetable broth for 15 minutes (absorption method). While quinoa is still warm, add spinach. Let cool. Add peppers, onion, artichoke. Toss to blend all ingredients.
This is fresh and tasty – the flavors are strong enough make any other sauce unnecessary. I think I’ll add black or pinto beans to the leftovers and serve as a side with dinner.
