I tried to make my gluten free cut out cookies again – but this time I used all coconut flour.
I am thinking that is the reason they were crumbly and would not form. I’ve never used egg replacer for these cookies, so it could’ve been that.
All was not lost, though! I dumped it all back into the bowl and stuck it back in the fridge. I ran to the store for another tub of (non-hydrogenated – YAY!) Tofutti Better Than Cream Cheese.
I also bought flowers for Jason:
Gluten Free and Vegan Lime Bars
2 1/2 cups coconut flour
1/4 cup cornstarch
1 teaspoon baking soda
1 cup dairy free butter
2 eggs (Ener-G replacer)
3/4 cup sugar
After giving up making cookies, press into prepared baking pan. Bake @ 375 for 10 minutes. Cool 5 minutes.
8 ounces dairy free cream cheese
1/3 cup coconut milk or almond milk
1 cup powdered sugar
1/2 cup lime juice
Combine and spread over crust. Bake @ 375 for another 20 minutes.
This crust tasted so good! I really want a cut out cookie that tastes like this. I will keep trying…
