Tex Mex cucumber boats have a deliciously easy Tex Mex quinoa salad filling. Fresh and flavorful, this recipe is a great lunch or dinner.
Ingredients
Tangy Avocado Sauce
- 1 avocado, peeled and pitted
- 4 slices pickled jalapeño + ¼ cup brine
- Handful cilantro
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ¼ teaspoon sea salt
Tex Mex Quinoa Salad + cucumbers
- 4 large cucumbers
- 1 cup cooked quinoa
- 1 cup cooked black beans, drained and rinsed
- 1 Roma tomato, diced
- ¼ red onion, peeled and minced
- 1 tablespoon fresh cilantro, minced
- 1 jalapeño, trimmed and minced
Instructions
Make Tangy Avocado Sauce
- In a blender jar, blend together the avocado, jalapeno, brine, cilantro, cumin, garlic powder, and salt.
- Add water one tablespoon at a time if needed to thin (it will depend on the ripeness of the avocado). Set aside.
Prepare cucumber and tex mex quinoa salad
- Scrub cucumbers and trim ends. Carefully slice in half lengthwise and scrape out the seeds with a spoon, hollowing out part of the middle of the cucumber.
- In a large mixing bowl, combine cooked quinoa, black beans, diced tomato, diced onion, minced cilantro, and minced jalapeño. Set aside.
- Fill the hollowed out cucumber boats with the quinoa mixture. Drizzle with sauce and serve.
