To kick off the first week of the Second Round of Meatless Monday A to Z, what I have today is not so much a recipe as it is one of my favorite snacks.

It’s avocado week!
When I ran the spa in a natural medicine clinic, I would eat this combination at least once a week. I’d run across the street and pick up some rice chips, a jar of salsa, a can of baby corn and an avocado. Super easy lunch. Tasty lunch.
Portland had gorgeous weather all weekend – in the upper 70’s and I think we even hit 80 on Saturday. We grilled both days – our first grilling of the season.
Saturday evening I returned home late after spending the afternoon with Dad, and we had enough daylight to grill! Jason and I had planned a night out, but at the last minute all we wanted to do was stay in, grill and find something good in the On Demand menu*. Perfect spring Saturday evening.
*Who in Hollywood or OscarTown did Ben Affleck upset? Argo was an excellent movie and should have at least earned a nomination.
Sunday we grilled again – I have a new burger recipe that I’ve been waiting to test on the grill – I’ll make sure it holds up a couple more times and then I will share – it is a good one! I made this salsa to snack on, mixing an avocado and baby corn with my standard mango jalapeno salsa.
When you are planning to make this, just go ahead and buy two avocados. That way can either just double the recipe, or make it again the next day with the leftover baby corn and salsa. You will want more the next day.
avocado and baby corn salsa
dairy, soy and gluten free, vegan
1/2 jar salsa (or 1/2 batch mango jalapeno salsa)
1/2 can baby corn, drained
Pour half the salsa into a bowl. Slice the avocado in half, remove pit. Score into cube shapes with knife, scoop out with spoon. If the baby corn is whole, slice each into 3 bite size pieces (some cans are already bite size). Add corn and avocado to salsa, add a pinch of salt and gently fold to combine.
Enjoy immediately or refrigerate to serve cold. Serve with rice chips.
