Did you know October is National Apple Month?

These grahams have the subtle sweetness from apples and are a perfect crunch. Unlike my spabettie crackers, I wanted these to have a natural rustic look, with an uneven edge. I simply rolled these and cut with my pizza cutter. I am currently writing a recipe for graham crackers from scratch. In the meantime, blending a vegan and gluten free graham into flour makes a quick cracker with a very short ingredient list!
apple graham crackers
vegan, gluten free, dairy free
makes 16-20 crackers
2/3 cup brown rice flour
2/3 cup graham flour (homemade by processing graham cookies)
1/2 cup apple puree or pulp
1 tablespoon molasses
Blend flours. Add apple and molasses, stir to combine. Bake at 350 for 11 minutes. Cool and store in airtight container.
We enjoyed these with sliced apples and Soy Kaas vegan mozzarella – a perfect snack. Another great pairing is date dip and mozzarella. Simple savory and sweet.
