We change the clocks this weekend – there will be more light! (Also, did you Oregonians see the bill to keep daylight savings year ’round?! I am so in.

This has been the best week so far for #MushroomMakeover – I loved last week’s workouts, and I think I must be seeing the results this week. I have also had positive feedback from a couple people who don’t see me daily. The CORE and GUNS workouts from last week are definitely going to become regular workouts for me, in addition to my favorites we are revisiting this week, the BURN and BUILD. My energy level is high, and I am not really feeling the afternoon tireds I sometimes do. (When I do? Green Tea!)

Corinne’s weekly focus is a really good one this week as well – I talked about one aspect of it here. The other part is keeping a food journal, via an app or old fashioned pen and paper. You know me and my lists and my handwritten everything – I totally got into this. I also noticed that it helped me continue last weeks focus of eating mindfully. Heh – it’s almost like Corinne planned this, yes?

It was a good week all around.

We are halfway through week two of the #MushroomMakeover. I am obligated to post one recap per week, but as always, when excited about something, I do more – in addition to the weekly review, I will be sharing some of the recipes I’ve been making recently. My recap posts will be at the end of each week, on Fridays or Saturdays.

This sandwich was especially good, and I am really liking arugula lately also. Such a unique flavor, and it goes well with the crispy sauteed mushrooms and the sweet and mildly spicy red peppers. The garlicy bean spread provides some extra oomph and flavor – this would be great as a bowl, as well – over quinoa or salad.

Well, hello there Monday.

Jason, Rosemary and I had a lovely four day holiday weekend, and spent most of it relaxing in the sunshine. It is still hot in Portland, which means slowing down, grilling outside, lots of ice cold drinks and chilled salads.

We have been listening to fireworks here on our hill all week – they started last Tuesday. Rosemary barks and growls at the booms, and wasn’t all that thrilled at seeing them flash across the sky (the park across from our house had a semi-pro display).

Jason grilled brats, peppers and onions. We ate salads. Jason baked cookies. I started a new book by one of my favorite authors. I organized my office in preparation for a new computer monitor. Tonight we are going monitor shopping. My office is getting a wireless and ergonomic makeover, courtesy of my husband.

and yesterday, I made my Soyster Po’ Boys for the third time.

Golf, skee ball and shuffleboard, oh my!

Jason and I were both in need of a relaxing, let’s go play kind of weekend. It began Thursday afternoon, and a nice long weekend was enjoyed.

I spent Friday morning with two girlfriends and one of their new babies – oh. so. cute. Sweet and mellow and did I say sweet? Left the girls at lunchtime, swung by the house and picked up Jason for vegan burgers at one of our regular favorites.

The weekend also included a couple movies, outside time with the dogs, veggie sushi, and shuffleboard. We played two games, I won two games.
