Cashew Hot Cocoa with Cinnamon Whip and Double Chocolate Mug Cake – this quick and easy hot cocoa is free of many top allergens, and tastes incredible!
Usually when we have snow days and are stuck at home, we enjoy some Baileys Irish Cream in our coffee. This year when we had our day of snow and another day of ice, I was sipping on a deliciously rich hot cocoa from a mix.
The next day? A fluffy, fiber rich double chocolate mug cake. Two ingredients, from a mix.
Fiber rich? Yep – the hot cocoa was too. This unique hot cocoa mix is the brand new Windy City Cocoa, from Kim Lutz of Welcoming Kitchen. Not only is it free of dairy, soy, gluten, eggs, and nuts, it contains gluten free whole grain oats!
Kim’s son has multiple food allergies, which long ago changed the way she cooks. That result benefits all of us with her hundreds of allergen free recipes – now we also benefit from her new cocoa!
The first one I sampled, I made as directed – with hot water. It was delicious. Hot or cold, this is delicious – it reminds me of a luxurious drinking chocolate.

Cashew Hot Cocoa with Cinnamon Whip
YIELD: serves one or two
dairy, egg, soy, and gluten free, vegan
In a saucepan over medium heat, whisk together cashew milk and cashew butter.
Remove from heat when mixture begins to bubble.
Add cocoa packet, whisk until smooth.
Pour into serving mug, top with Cinnamon Whip.

- 1 tablespoon cashew butter
- 1 packet Windy City Cocoa
- 1 - 2 spoons Cinnamon Whip
