I was so happy to find a carambola, or star fruit, that I bought two!
I sliced one and ate it with my Spark this morning – my favorite flavor, Mandarin Orange.
Carambola is such a pretty fruit, and this one was especially tasty!
I know I have a winner of a recipe when Jason tells me to “make this one again and again” before I have a chance to ask him if he likes it. 😀
He likes most of what I make, and I always tell him to be completely honest, because if you say you’ll like it, I’ll make it again!
1 block extra firm tofu, cubed
5-6 green onion tops, sliced
7-8 cremini mushrooms, quartered
1/2 inch ginger root, pulsed
3 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
Nori Komi Furikake (optional)
Cut tofu into one inch cubes, green onion into once inch slices, using only green tops. Chop mushrooms into quarters.
Pulse ginger root into a “paste”. Add to soy sauce, vinegar, oil. Combine with tofu, mushrooms, onions and coat completely. Cover and refrigerate. When serving, sprinkle with nori komi furikake.
Fresh and flavorful – very umami!
