Did this weekend fly by for everyone else, or just me?

While it was a perfect mix of fun things and relaxing down time – yes I enjoyed a short nap – it just went too quickly.

Grapefruit Thyme Mimosa-Ritas

ah, summertime.

It truly is my favorite time of year. Longer, warmer days equal more time outdoors, fresh creations with garden ingredients, cool cocktails with friends.

Sitting out in the evening, relaxing while the daylight leaves and the yard’s nightlights come on. Frogs in the pond croak now and then, causing the dogs to jump off our laps and snif snif snif in search of the frog…

Grapefruit Thyme Margaritas

My latest libation creation is a fusion of two favorites – mimosas and margaritas. Fresh herbs from the garden (the thyme came back from last year!) mix well with bubbly and my favorite reposado tequila.

Dark Chocolate Oat Cream


Many of you will remember my Dreamy Dark Chocolate Oat Cream up there (so many of you tried it, yay!). I have made this recipe many times, and have recently started playing with new flavors.

Because it is summer. Okay, not officially, but it’s close enough for me. My schedule has been a bit more free lately, which feels summer like. The sun has been shining, even on the rainy days if you can pick up what I’m puttin’ down. Light and free, that’s me.

If someone had told Little Kid Kristina that one day, she would be excited about an invite to a grocery store media event? Little Kid Kristina might have eye rolled and side eyed and laughed… in confusion.

As it is, I am (very likely overly) excited that I now have a Whole Foods Market within one mile of my neighborhood, rather than 8 or 11, the distance of the Whole Foods stores I currently frequent. Whole Foods Greenway is opening this Wednesday May 21, and I was invited to a pre-opening sneak peek.

It is light, it is bright, everyone is happy, everyone is smiling.

I am wearing sandals, I am wearing sundresses, I am wearing shorts.

We are drinking fresh juice and ice cold beer, we are eating all kinds of fruit and vegetables. and we are eating salads.

Big beautiful entree size powerhouse salads. Vibrant flavors and bright colors, a mixed palate of textures and proteins and carbs. Filling and fresh, but light at the same time. With many opportunities to use my favorite celery ranch dressing.

Our salad tonight has spicy flavors – the greens were collards, Swiss chard, kale and spinach. Additional protein from black beans and some crunch from corn, with a fresh made salsa over the top. Spicy heat keeps you cool on hot days, did you know?

We are gearing up for a hot summer here, and I already have several salad ideas to share with you in the next month or so. In the meantime, I have collected some of my favorites and some good looking ideas from around the web – salads for spring!

I first met Allison Rivers Samson at the Vida Vegan Conference – I was lucky to be invited to a super fun dinner she was also attending. Lucky because she brought all of us some of her amazing Lavender Caramels from her gourmet confection boutique.

I have kept in touch with Allison, and was so very excited to hear she was writing an e-book. I had been a longtime fan of her VegNews column, and her recipes (mac and cheese!) are legendary. Comfort food at it’s finest, which you all know I love.
