So many times I opened this draft, and sat here blankly. Trying to find words.
If there is one thing I learned over the past 2 years, is that life is a precious gift, and can sometimes be taken from us in a blink of an eye.
This weekend, with #ElleAPalooza, we celebrate a life taken too soon. We unexpectedly lost Elle of Elle’s New England Kitchen just over a week ago. Food bloggers came together in shock and grief, and, as we always do, immediately found ways to celebrate, give tribute, and fund raise.
Another thing I am continually learning is that life is to be celebrated. Be grateful for it, live it to the fullest, find happiness and joy whenever you can.
So today I am celebrating Elle. To call her A Good Person is an understatement. To say she was feisty, in the best of ways, brings a smile to my face. She was funny. She loved people. She loved animals. She loved to cook and bake, and did this well.
My favorite recipe of Elle’s is her Garden Gazpacho with Hazelnuts, and it is the first recipe I made for #ElleAPalooza. Incredibly flavorful and inventively easy, this is one I have made several times. I enjoy it as a soup, as a sauce over pasta, and once it even became the filling for some interesting burritos.
Elle may have rolled her eyes at that last one.
It is a good recipe, and one I follow precisely not only because it is fantastic, but also because her recipe is already delightfully vegan.
