spiced cashew granola cookie wedges

Remember when I made Jason the Giant Mall Cookie for his birthday?

I had a craving for one yesterday. One we could enjoy while watching The Office series finale. Jason and I have watched this series from the beginning, way back in early 2005.

I ended up baking this cookie in a pie dish, so it’s wedges are a bit more… hefty. We split one.

Then we split another one.

With the oatmeal and the cashews and the dark chocolate, these are practically a health food. Not that I care – I wanted a comfort food cookie to distract from the fact that there will be no more Jim and Pam, no more hilarious Creed, and no more weekly Ed Helms.

and a reminder of Deangelo Jeremitrius Vickers. I like everything Will Ferrell does.

adapted from granola cookie wedges

2 tablespoons flax seed, freshly ground
1/3 cup + 1 tablespoon warm water

3/4 cup gluten free all purpose flour
1/2 cup quick cooking oats
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon baking powder
1/2 + cup dark chocolate chips
1/4 cup maple syrup
1/4 cup coconut oil
1 tablespoon vanilla paste

1/4 – 1/3 cup cashew pieces

Grind flax seed in blender, coffee grinder. Place 2 tablespoons flax in a bowl, add water and stir. Place in refrigerator to set into gel (this equals / replaces two eggs).

In large mixing bowl, combine flour, oats, cinnamon, nutmeg, baking powder, and chocolate chips, stirring to combine completely. In small bowl, combine maple syrup, coconut oil, vanilla paste and flax mixture, fold into dry ingredients. Transfer into prepared (parchmented / sprayed) pie dish or tart pan, top with cashews.

Bake at 350 for 19-22 minutes or until set.

I never cared for those big mall cookie cake things – well, I didn’t like the icing on them I should say. Something weird about it. These look fantastic. Part brownie part cookie. Happy Friday – been thinking about you. I hope things are ok for you and your dad.

I actually don’t think I ever had the giant mall cookie? :)

Holy YUM!!! This is spawning an idea for Scott’s upcoming birthday! I think I’ll create a cookie concoction in a pie dish too and put a big ‘ol scoop of homemade ice cream on top! Last year I did the ice cream sandwiches, this year it’s the mall cookie — thanks to YOU!! I’ll let you know how he reacts, it’s a couple weeks away :)

Jason LOVED his birthday cookie last year – when I asked what kind of cake I could make him, he said “giant mall cookie” :)

These cookies sound so good! I might have to make up a pan and chop them up into convenient mid-morning snack portions. :)

You may like everything Will Ferrel does, but I love everything you do. This cookie sounds fabulous, especially with the inclusion of cashews. You’re a rock star.

Oooooooooohhhhh this looks lovely! I’ve been on a big cashew-love trip lately, especially since the cashew butter arrived which I ordered from Amazon. Peter loves cashews as well, we always have a big jar in the shelf from which he likes to snack. :)

I always have cashews on hand… something feels OFF if I run out 😉

I bet the addition of cashews in this recipe helps makes these cookie wedges fantastic! I would LOVE one for breakfast! :-) I’m trying not to turn on the oven, but …
