Remember when I made Jason the Giant Mall Cookie for his birthday?

I had a craving for one yesterday. One we could enjoy while watching The Office series finale. Jason and I have watched this series from the beginning, way back in early 2005.

I ended up baking this cookie in a pie dish, so it’s wedges are a bit more… hefty. We split one.

Then we split another one.

With the oatmeal and the cashews and the dark chocolate, these are practically a health food. Not that I care – I wanted a comfort food cookie to distract from the fact that there will be no more Jim and Pam, no more hilarious Creed, and no more weekly Ed Helms.

dairy, egg, soy, and gluten free, vegan

adapted from granola cookie wedges

2 tablespoons flax seed, freshly ground
1/3 cup + 1 tablespoon warm water

3/4 cup gluten free all purpose flour
1/2 cup quick cooking oats
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon baking powder
1/2 + cup dark chocolate chips
1/4 cup maple syrup
1/4 cup coconut oil
1 tablespoon vanilla paste

1/4 – 1/3 cup cashew pieces

Grind flax seed in blender, coffee grinder. Place 2 tablespoons flax in a bowl, add water and stir. Place in refrigerator to set into gel (this equals / replaces two eggs).

In large mixing bowl, combine flour, oats, cinnamon, nutmeg, baking powder, and chocolate chips, stirring to combine completely. In small bowl, combine maple syrup, coconut oil, vanilla paste and flax mixture, fold into dry ingredients. Transfer into prepared (parchmented / sprayed) pie dish or tart pan, top with cashews.

Bake at 350 for 19-22 minutes or until set.
