Grilling season is here!
Well, it was last weekend. This week it is cold and rainy, but this Saturday and Sunday it’s said to be sunny and 70′s. I’m excited to spend the entire weekend outdoors.
Last Saturday was our first grilling of the season. Jason marinated and grilled some cod and corn while I made a fresh salsa to go with it.
fresh and fruity spicy salsa
1 fresh mango
1/2 red onion
1 orange bell pepper
2 cobs corn
juice of 1/2 lime
pinch sea salt
Peel and cut mango into small cubes. Dice onion and peppers into pieces smaller than mango. Cut corn off grilled cob. Combine in serving bowl, sprinkle sea salt and lime juice.
Serve with grilled fish tacos. Also good as a tortilla chip dip. I made a couple hours ahead and stored in refrigerator to let the flavors develop (while the fish was marinating).
marinated grilled cod
1 pound fresh cod
juice of one lime
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
Whisk together lime juice, olive oil, spices. Pour over fish, turning fish to coat completely. Cover and marinate in refrigerator 30 minutes.
Jason brushed the grill with oil and grilled the fish over indirect heat – heating one side to a medium heat, grilling on the other side. Grilling time – each side 8-10 minutes or until fish is opaque, flaking easily.
We warmed corn tortillas on the grill. Tacos were simple – grilled fish topped with salsa, lime slices on the side.
Fresh and flavorful, these are a perfect combination of spicy, savory and sweet. I’m hoping to make them again soon – perhaps even this weekend!
