grilled fish tacos

Grilling season is here!

Well, it was last weekend. This week it is cold and rainy, but this Saturday and Sunday it’s said to be sunny and 70′s. I’m excited to spend the entire weekend outdoors.

Last Saturday was our first grilling of the season. Jason marinated and grilled some cod and corn while I made a fresh salsa to go with it.

fresh and fruity spicy salsa

1 fresh mango
1/2 red onion
1 orange bell pepper
2 jalapenos
2 cobs corn
juice of 1/2 lime
pinch sea salt

Peel and cut mango into small cubes. Dice onion and peppers into pieces smaller than mango. Cut corn off grilled cob. Combine in serving bowl, sprinkle sea salt and lime juice.

Serve with grilled fish tacos. Also good as a tortilla chip dip. I made a couple hours ahead and stored in refrigerator to let the flavors develop (while the fish was marinating).

marinated grilled cod

1 pound fresh cod
juice of one lime
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
sea salt

Whisk together lime juice, olive oil, spices. Pour over fish, turning fish to coat completely. Cover and marinate in refrigerator 30 minutes.

Jason brushed the grill with oil and grilled the fish over indirect heat – heating one side to a medium heat, grilling on the other side. Grilling time – each side 8-10 minutes or until fish is opaque, flaking easily.

We warmed corn tortillas on the grill. Tacos were simple – grilled fish topped with salsa, lime slices on the side.

Fresh and flavorful, these are a perfect combination of spicy, savory and sweet. I’m hoping to make them again soon – perhaps even this weekend!

We love our grilled romaine, cedar plank salmon, and asparagus. I like portobellos on the grill, and at least once a summer I have to grill a veggie dog…

I dont think i’ve ever used corn tortillas for fish tacos… or any tacos! only the fried variety which i’m trying to avoid ;) Do you love them? what’s your fav tortilla?

my favorite corn tortilla is Don Pancho – have you ever seen those? they are all over stores here, but I think they are made here in Portland too… it’s hard to find a soft corn tortilla that doesn’t crack or break! :D

We’ve made fish tacos a few times (with halibut or tilapia) but they didn’t look nearly as awesome as yours.

This is nothing short of delicious. I almost always order fish tacos and never really think about making it because I’m always afraid of the fish breaking apart and being a mushy mess. Yours looks delightfully flaky and all-together. :)

I love fish tacos! Just add avocado to mine with a side of black beans, and this is my ideal meal.

Jason wanted black beans too :D and don’t even bring up the avo… :( we stopped at the store for the fish and I thought I had an avocado at home… I had already eaten the last one! ;)

These look perfect! Max has been begging for shrimp tacos for 2 weeks now. I’m making them Sunday! I love grilled mushrooms so much! I think Sunday will be our grilling day!

do you skewer the mushrooms to grill? and the shrimp too? we skewer mushrooms, it is SO good… I love a tasty veggie skewer anyway, and I think the mushrooms are one of my favorites! I’m hoping to grill Sunday as well, if not Saturday too!!

Mmmm! I LOVE fish tacos! It’s been so long since I’ve had them…or bought fish…that’s too sad! What’s wrong with me? Why am I talking to myself in this comment?? Ahhh!

In my opinion, EVERYTHING taste better on the grill! No if’s, and’s, or but’s about it!
