fudgy pumpkin brownies

Basil goes to “his grandparents” house when we are out of town. After about 30 minutes, he is comfortable and happy, and running the show, I hear. My parents have two dachshunds of their own, so it truly is a Long Dog Party over there.

To thank my parents for watching Basil while we were on vacation,
I made some sweets.

These are dense and chewy – almost like fudge.

Fudgy Pumpkin Brownies

1 cup agave
1 can pumpkin
1 egg (I used Ener-G egg replacer)
3 teaspoons vanilla
1 1/3 cups flour (I used a mix of tapioca + GF all purpose)
3/4 cup cocoa
1/2 teaspoon baking powder
1/4 teaspoon sea salt
3/4 cup chocolate chips (I used Whole Foods vegan)

Combine agave and pumpkin – add egg and vanilla. Combine flour, cocoa, baking powder + salt, add to sugar mixture. Stir in chocolate chips.

Bake @ 350, 50 minutes or until inserted toothpick comes out clean.

I had to taste test, of course. With Barney Butter, of course.

:) my mom said she likes the black bean brownies better – I think these are less sweet. but SO good :)

Of course you had to taste test – I would love to taste test for you ;-) So is Basil just worn out completely by the time you pick him up?

4 spabettie October 11, 2010 at 11:34 am

YES !! he is *SO* excited to see us, and then clings to us while we visit with my parents, as if we’d leave him again. then he gets home and zips around the house a bit, and finds his blanket and crashes :)

6 spabettie October 11, 2010 at 11:35 am

I LOVE adding pumpkin to baked goodies, in place of butter / oil.

That sounds like my kind of brownie- I prefer them less cakey and much more dense! *Swoon…

12 spabettie October 11, 2010 at 12:48 pm

me too… love them like this. :)

13 Mo@MommyRD October 11, 2010 at 12:24 pm

Oh my -do those look soooo good right now. I think I may have to get a bite of chocolate just to get my mind off baking those right now.

Question- I’m new to GF baking… why the tapioca flour and GF all purpose? Could you just use all GF AP flour?

14 spabettie October 11, 2010 at 12:48 pm

you totally can. sometimes I just like to mix it up. not necessary at all. :D

15 dorrybird October 11, 2010 at 1:05 pm

Yumsssss! I’m sure your parents love the sweet treats after watching their grand-dog. Pumpkin is so damn versatile. Love the stuff.

16 spabettie October 11, 2010 at 1:38 pm

I know… I put it in everything. I buy it by the case, so I have it year-round.

Can never go wrong with pumpkin, and you’ve proven it time and time, and time ago.

Long Dog Party, that is too much, literally:) I want to get my parents a bumper sticker that says “I Love my Grandog.”

20 spabettie October 11, 2010 at 1:50 pm

I prefer dense and chewy brownies better than the cakey and light brownies. These fit the bill…I want to try these. Hopefully they freeze well too so I can make them ahead of time for parties

Thanks for sharing.
